Soup with meat and pickled cucumbers

Recipe Ingredients

  • 17.5 oz beef
  • ½ tablespoon pearl barley
  • 4-5 potatoes
  • 3-4 pickled cucumbers
  • 1 cup cucumber brine
  • 2 onions
  • 1 carrot
  • celeriac
  • bay leaf
  • salt
  • pepper

Preparation


The amount of ingredients is for a 1 gallon sauce pan.

Cut the meat into small pieces, cover with water, and boil for 1 hour.

Then add rinsed barley and cook for 30-40 minutes.

Peel the potatoes, cut into strips or cubes.

Add potatoes into the broth with barley and cook for 10 minutes.

Mince the onion.

Grate the carrot on a medium grater.

Cut cucumbers into strips.

Simmer the cucumbers by adding a little bit of broth.

Sauté the onion and carrot in vegetable oil.

Add cucumbers to the boiling broth.

Then add onion and carrot.

Then add the cucumber brine.

Then add the bay leaf, celeriac, pepper. If necessary, add salt and cook for another 5 minutes. Sprinkle the cooked soup with greens (fennel, parsley, etc.).
