Tomato soup with rice and meatballs
Recipe Ingredients
- 24.5 oz tomatoes
- 17.5 oz ground meat (pork + beef)
- 1 egg
- ½ cup rice
- 1 onion
- 2-3 garlic cloves
- salt
- pepper
- greens to taste (fennel, parsley, etc.)
Preparation
Add an egg, salt, pepper to the ground meat. Mix well.
Form meatballs out of the ground meat, so they are the size of a walnut.
Peel the skin from tomatoes, grind in a blender or grate on a grater.
Mince the onion.
Add 0.7 gallon of water and bring to a boil. Add rice to the boiling water.
When rice starts boiling, add meatballs and boil for 5 minutes.
Add tomatoes.
Then add onion (you can sauté the onion in vegetable oil), salt, pepper and boil until ready.
When the soup is ready, add garlic squeezed through a garlic press, let it sit under a lid for 20-25 minutes. Serve the soup in plates and sprinkle with greens. Add sour cream to taste.
