Cake with dried apricots, raisins and nuts
Recipe Ingredients
- 7 oz butter
- 7 oz sugar
- 1 teaspoon vanilla sugar
- 4 eggs
- 5.5 oz raisins
- 5.5 oz dried apricot
- 7 oz nuts (walnuts, peanuts, hazelnut, almond)
- 9-10.5 oz flour
- 3 teaspoons baking powder
- 3.5 oz milk chocolate
Preparation
Soak dried apricots and raisins in warm water for 15-20 minutes.
Mince the nuts.
Cut the apricots into cubes.
Cream the butter with sugar and vanilla.
Add eggs and combine.
Add dried apricots, raisins and nuts (save some nuts for decoration), mix well.
Add baking powder, flour and mix the dough.
Place the dough in the pan greased with butter (I have a pan that is 9x4” and 2” deep). Place in the oven preheated to 350F. Bake for about 1 hour. To check if the cake is ready, you need to punch it with a toothpick (or match). If it is dry, then the cake is ready.
Melt the chocolate. Cover the baked cake with chocolate and sprinkle with nuts.
