Recipe Ingredients
- 17.5 oz mutton or beef
- 21 oz potatoes
- 17.5 oz tomatoes
- 10.5 oz eggplant
- 7 oz carrot
- 2 onions
- 4 garlic cloves
- bay leaf
- salt
- ground red pepper
- greens to taste (fennel, parsley, etc)
Preparation
This amount of ingredients is for 4 medium pots.
Cut the meat into small pieces.
Cut eggplants into cubes. Add salt and leave for 30 minutes to get rid of bitterness. Then wash in cold water and slightly drain.
Cut tomatoes into cubes.
Grate the carrot on a large grater.
Cut potatoes into cubes.
Mince the onion.
Place meat on the bottom of the pots. Add a little bit of salt and pepper.
Place potatoes onto the meat.
Place eggplants onto the potatoes.
Place the onion on eggplants.
Place carrots on the onion.
Place half of tomatoes on the carrots. Add a little bit of salt and pepper. If you want for the dish to be more liquid, you can add a little bit of water or broth. Bake in the oven at 350F for 1.5-2 hours.
15 minutes before the dish is ready, add the rest of tomatoes, press a garlic clove into each pot and add a bay leaf.
Sprinkle the cooked dish with minced greens.
