Pork Stew with vegetable and mushrooms

Recipe Ingredients

  • 17.5 pork (filet)
  • 10.5 oz eggplants
  • 10.5 oz marrow squash
  • 10.5 oz tomatoes
  • 10.5 oz champignons
  • 7 oz carrots
  • 7 oz bulb onion
  • 3 garlic cloves
  • greens (fennel, parsley, etc.)
  • salt
  • pepper

Preparation


Cut pork into strips.

Cut the onion into half rings.

Grate the carrot on a grater or cut into strips.

Clean marrow squash and cut into cubes.

Cut eggplants into cubes (if the skin is thick, then peel it). Add salt and leave for 30 minutes, so bitterness would disappear. Then rinse in cold water and drain slightly.

Cut tomatoes into cubes.

Cut mushrooms into slices.

Sauté the pork and onion in vegetable oil.

Add carrots and simmer for 5 minutes.

Add marrow squash and eggplants. Simmer for 15 minutes.

Then add mushrooms and tomatoes. Add salt, pepper and simmer for 5-7 minutes.

Add minced garlic and greens. Simmer for 2-3 more minutes.
