Apricot pie


 

Recipe Ingredients

  • 17.5 oz apricots (or peaches, plums)
  • 7 oz butter or margarine
  • 9 oz sugar
  • 3 eggs
  • ½ oz baking powder
  • 16-17.5 oz flour

Preparation


Cream butter with sugar.

Add eggs and combine.

Add baking powder, flour and mix the dough.

Wash apricots, remove pits and cut into cubes.

Place 2/3 of the dough into the pan greased with vegetable oil (I have a pan 8x12”) and even out with hands.

Place apricots on the dough.

Roll the rest of the dough (you can add a little but more flour) and cut into strips.

Lay the strips into a “network”. Place in the oven.

Bake at 350F for 25-30 minutes.
