Eggplant appetizer Traffic Light

Recipe Ingredients

  • 17.5 eggplants
  • 2-3 small tomatoes
  • 3-4 tablespoons corn
  • greens (parsley, fennel, etc)
  • 1 onion
  • salt
  • vegetable oil

Preparation


Cut the eggplants into small cubes. Add salt and leave for 30 minutes. Then rinse in cold water and lightly squeeze.

Mince the onion.

Sauté the onion in vegetable oil.

Add eggplants and salt and fry until ready.

Cut tomatoes into cubes.

Mince the greens.

Place eggplants on a flat dish, even them out and form a rectangular. Create 3 round holes in it. Place tomatoes, corn and greens in them. Mix everything on the table. You can use yellow Bulgarian pepper instead of corn.
