Cheesecake (without baking)
Recipe Ingredients
Base:
- 10.5 oz cookies (choose the one that is easily crumbles)
- 3.5-5.5 oz butter
Filling:
- 17.5 oz mascarpone (or other cream cheese, for example, Philadelphia)
- 7 oz 33-35% cream
- 10.5 oz sugar
- 7 teaspoons gelatin
Preparation
Melt the butter.
Run the cookies through a meat grinder.
Add butter to the cookies and mix. The mix should be crumbling.
Place the cookies with butter in a mold (9.5-10” diameter) and tamp well. Place in the fridge while you are preparing the filling.
Add 3.5 oz of cold boiled water to gelatin. Let it sit for 1 hour.
Then bring the gelatin to a boil, but do not keep boiling. Cool.
Beat mascarpone with sugar.
Add gelatin and mix well.
Beat the cream separately.
Combine the mascarpone with cream.
Place the mass on cookies, even it out and place in the fridge for 3-4 hours.
