Avocado Boats

Recipe Ingredients

  • 3 ripe avocadoes
  • 3.5 oz shrimp (boiled and cleaned)
  • 10-12 cherry tomatoes (or 2-3 regular tomatoes)
  • juice of half a lemon
  • vegetable oil
  • salt

Preparation


Cut avocado lengthwise into two parts and remove the bone.

Using a tea spoon, remove the pulp without damaging the skin.

Cut the pulp into cubes.

Add lemon juice and combine.

Cut cherry tomatoes into 2 or 4 parts (cut the regular tomatoes into cubes)

Combine the avocado pulp, shrimp and tomatoes. Add a little bit of salt and add vegetable oil.

Stuff the avocado shells with salad.
