Chocolate cream


 

Recipe Ingredients

  • 17 oz cream (15-20%)
  • 8.5 oz milk
  • 7 oz sugar
  • 6 yolks
  • 3 teaspoons cacao powder
  • 1 oz gelatin

Preparation


Soak the gelatin in 5 oz of cold boiled water and leave for 1 hour.

Cream yolks with sugar until particles disappear.

Add milk and combine.

Add cacao and mix well.

Heat the mix in the water bath until consistency resembles liquid sour cream.

Then add gelatin and heat the mix until it dissolves. After all the gelatin dissolves, cool the mix.

Pour the cream into the cooled mix and mix well.

Pour the mix into parfait glasses and refrigerate for 3-4 hours. You can sprinkle grated chocolate and pour melted chocolate onto the ready cream.
