Eclairs


 

Recipe Ingredients

  • 3.5 oz butter
  • 4 eggs
  • 6.5 oz flour
  • ½ teaspoons salt
  • Custard or butter cream

Preparation


Bring 8.5 oz of water to a boil, add butter, salt and bring to a boil.

Add flour into the boiling water and mix well. Cook for 2 minutes.

Slightly cool the mix. Add one egg, mix well, add the second one and combine. Add all the eggs this way.

Cover the pan with baking paper. Using a spoon or pastry tube, lay out the dough in a form of sticks that are 4-4.5” in length. Bake in the oven preheated to 350F, bake until a golden crust is formed, for about 35-40 minutes. Do not open oven doors during baking.

Stuff the cooked pastries with cream using a pastry tube. You can cover the pastries with melted chocolate and sprinkle with coconut flakes.
