Coffee cream


 

Recipe Ingredients

  • 8.5 oz coffee (3 teaspoons for 8.5 oz)
  • 3 yolks
  • 5.5 oz sugar
  • ½ oz (2 teaspoons) gelatin
  • 6.5 oz 33-35% cream

Preparation


You should get 5 servings from this amount of ingredients.

Add cold boiled water to the gelatin and leave for 1 hour.

Combine yolks with sugar, place in the water bath and heat until sugar completely dissolves.

Add coffee, combine and remove from the water bath.

Bring gelatin to a boil, but do not keep boiling.

Add gelatin to the coffee and yolk mix. Cool.

Beat the cream into foam.

Add cream to the cooled coffee and yolk mix. Mix carefully.

Place in parfait glasses and refrigerate for 3-4 hours. Decorate with confectionary powder or grated chocolate.
