Eggplants baked with mushrooms


 

Recipe Ingredients

  • 17.5 oz eggplants
  • 14 oz champignons (fresh or frozen)
  • 1 cup sour cream (15-20%)
  • 1 onion
  • salt
  • vegetable oil

Preparation


Cut eggplants into cubes.

Add salt to eggplants and leave for 30 minutes. Then wash them in cold water and drain.

Cut the onion into cubes.

Cut mushrooms into strips.

Sauté the onion in vegetable oil.

Add eggplants and sauté for 5-7 minutes.

Then add mushrooms, salt, sauté for another 5-7 minutes.

Place eggplants with mushrooms into the pan for baking.

Add sour cream and bake for 350F for 25-30 minutes.
