Easy Bruschetta Recipe

In need of an easy bruschetta recipe? Here is a very simple and fast bruschetta recipe that I usually cook for my family.

Few years ago I met some of my high-school colleagues. We decided to get some coffee at a local restaurant and few ordered some food. We were presented with a plate filled with bruschetta at first, until the main dish was ready.

I was completely sold and decided to replicate the dish at home.

Of course, back then I couldn’t be bothered to cook too often, so I think I made bruschetta once or twice and then forgot about it.

This weekend my husband brought home some really tasty tomatoes. He went to the market and got some organic tomatoes that grow in Oltenia, a famous region in Romania for their amazing tomatoes.

It got me thinking.

It didn’t take me too long to get some sliced bread, our toaster and then make some delicious bruschetta. I ate more than 5 big slices of bread and would have eaten more, but was way too full already.

If you’re into something very fast, very easy and very cheap to make, behold the simple bruschetta recipe.

One word of caution: make at least 8-10 portions or you’ll have to fight your family for them.

Easy Bruschetta recipe: Step by Step

BRUSCHETTA INGREDIENTS:

  • 2-3 tomatoes very ripe, ideally prune tomatoes, since they have less seeds and moisture. Any great tasting tomatoes would do eventually.
  • 6 loaves bread the slices should be about 1 cm thick.
  • 2-3 cloves garlic depending on how big or small they are, you can use 2 or 4.
  • salt
  • basil leaves (optional)
  • parsley leaves (optional)

HOW TO MAKE BRUSCHETTA

  • Prepare your bread. You’ll have to either slice it (1 cm thick slices), or, if you have bought already sliced bread, you can use it. Anything goes here, from sourdough natural yeast bread to white fluffy bread. Whatever you usually consume. There are few ways to toast it – toast on a barbecue or griddle pan. – sprinkle some olive oil and put into the oven for few minutes – just throw it into your regular bread toaster. I usually go the fastest route – so toaster it is.
  • Get a clove of garlic and rub the newly toasted bread. For maximum flavor, rub both sides.
  • Wash and cut your tomatoes. You can chop them thinly (I like them chopped more), but bigger chunks work great as well.
  • Sprinkle your toasted bread slices with some olive oil (on one side now). Add some salt and the tomato chunks.
  • Eat and viciously fight anyone who gets near this godly tasty dish 🙂

  • Just like pizza, salads, pasta and some similarly versatile dishes, tomato bruschetta can have many variations.

I like them simple, so I don’t add parsley or basil. Some add them into the chopped tomatoes.

You can also add a bit of a balsamic vinegar into the mix, for more flavor.

There are cooks who crush the garlic and add it into the tomato spread.

You can try various techniques and ingredients until you reach your desired outcome.
