Simple Pork Stew Recipe

Crazy tasty pork stew recipe, with fatty pork meat, just like my mother in law does it. Simple Romanian recipe you'll come to love.

This is my MIL’s recipe. Husband just came home from Romania and wanted to make sure I cook this pork stew recipe as his mother does. It’s amazingly tasty, pretty easy to do and goes amazingly well with my simple mashed potatoes. You can also add the potatoes in the stew, but I personally hate them with a passion like this and daughter isn’t thrilled either.

So, simple pork stew that you can serve with potatoes (mashed, fries or baked), rice, cous-cous etc.

Pork Stew Recipe Ingredients

  • 1 lbs of fatty pork meat (shoulder, maybe)
  • 3 onions
  • 5-6 garlic cloves
  • 2 bell peppers
  • paprika (I use regular one, you can use hot paprika, if you fancy more heat)
  • salt to taste

How to Cook the Simple Pork Stew

  • Cut the meat in small cubes and fry with the diced onions and garlic, till whitish in color (we don’t need to burn it, just to lock in the juices);
  • add HOT water until it covers the meat / onions completely. Never use warm / cold water, you’ll mess up the recipe;
  • let simmer until it’s not as watery anymore
  • dice the peppers and add them
  • add more hot water (until it covers the stew completely)
  • let simmer more and at the end add paprika
  • you can also add some parsely, and turn off the stove.
